Le Guérandais is a cooperative of salt harvesters working the marshes of Guérande in Brittany, France. This coarse sea salt, called gros sel de Guérande at home, is raked by hand and left in large, natural crystals. It's a coarse celtic sea salt built for a grinder, but the big crystals also make it a favorite brining salt for cooks who want real flavor with no additives.

What makes it different

 

Where it comes from

Guérande sits on the coast of Brittany, where shallow clay ponds fill with seawater and slowly evaporate in the sun and wind. Harvesters rake the coarse celtic sea salt off by hand, a method that hasn't changed in over a thousand years.

Grind it or cook with it

Sized for a salt grinder, so you can crack it fresh over a finished dish. It also holds up well in the pot, which is why so many cooks reach for it as a brining salt for meat, poultry, and pickles.

The crystal

Grey in color from the clay of the marsh, with a moist, unrefined crystal. It's coarser and less processed than most table salt, so a little dissolves slower and lasts longer in the shaker.

Le Guérandais brings together salt harvesters, known locally as paludiers, who work the marshes of Guérande in Brittany. Each one hand-rakes their own ponds, using techniques passed down through families for generations.

This coarse sea salt, or gros sel de Guérande, is harvested, dried, and bagged with nothing else added. No processing, no bleaching, no shortcuts, just salt and sun.
