Le Guérandais is a cooperative of salt harvesters working the marshes of Guérande in Brittany, France. Their fleur de sel de Guérande, or "flower of salt," is the rare, delicate crust that forms on the surface of the water and is gathered by hand with a wooden rake, before it ever touches the bottom of the pond. It's one of the most prized forms of french sea salt, and it's easy to see why once you try it.

What makes fleur de sel different

 

How it's harvested

On the right day, with the right wind, a thin crust of salt crystals forms on top of the marsh. Harvesters skim it off by hand using a traditional wooden tool called a lousse. Because it's so limited, fleur de sel makes up only a small share of what a marsh produces each year.

The texture

Light, flaky, and slightly damp, this fleur de sel salt sits on top of food instead of dissolving straight into it. That's what gives it its signature crunch and why chefs treat it as a finishing salt rather than a cooking salt.

How to use it

Sprinkle this french fleur de sel over a finished steak, roasted vegetables, sliced tomatoes, caramel, or fresh bread with butter. A little goes a long way, so add it right before serving, not while cooking.
