​Orange and chocolate ganache

This ganache is great to use for French macaron filling or to make a tart.

Prep time: 5 minutes - Cook time: 3 min - Chilling time: 40 minutes


  • Small saucepan
  • Silicone spatula
  • Heatproof bowl


  • 60 g of orange juice
  • 100 g of chocolate chips
  • 12 g of butter at room temperature


  1. Place the chocolate in a large, heatproof bowl. Set aside.
  2. Pour the juice into a small saucepan. Bring to a boil over medium-high heat. Remove from the heat.
  3. Carefully pour the hot juice over the chocolate. Mix from the center to the outside with a silicone spatula until the chocolate melts completely. Add the butter and mix gently until the butter is fully incorporated and the ganache is smooth and glossy.
  4. Refrigerate, covered, for at least 40 minutes before using.
