Fruit carpaccio

  • Seasonal fruits:
  • Apples, strawberries, bananas, kiwis, etc
  • For the syrup:
  • 1/4 C (60g) water
  • 1/3 C (60g) sugar
  • 1/2 vanilla bean
  • Cinnamon, ginger
  • Fresh mint

Preparation of the syrup:

  1. In a saucepan, heat the water, sugar, with the grated vanilla bean, a pinch of cinnamon, a pinch of ginger. As soon as it boils, turn off the heat and let it steep.

Preparation of carpaccio:

  1. With a slicer or a sharp knife, slice all the fruit into strips. Arrange the strips of carpaccio on a plate. With a brush, cover the fruit with the syrup at the last moment.
  2. Decorate with chiseled fresh mint.
