Fruit carpaccio
- Seasonal fruits:
- Apples, strawberries, bananas, kiwis, etc
- For the syrup:
- 1/4 C (60g) water
- 1/3 C (60g) sugar
- 1/2 vanilla bean
- Cinnamon, ginger
- Fresh mint
Preparation of the syrup:
- In a saucepan, heat the water, sugar, with the grated vanilla bean, a pinch of cinnamon, a pinch of ginger. As soon as it boils, turn off the heat and let it steep.
Preparation of carpaccio:
- With a slicer or a sharp knife, slice all the fruit into strips. Arrange the strips of carpaccio on a plate. With a brush, cover the fruit with the syrup at the last moment.
- Decorate with chiseled fresh mint.
