Do you bake them covered? Or that lid on the picture just to make it pretty ?

In a video you poured batter into smaller silicone cups and didn’t bake it right away. Also you said the ramekins can be pre-filled with everything and placed in a fridge for later use, to be baked (maybe in several hours) right before we are ready to eat the desserts. My question is how the batter will bake? Is it ok to leave it alone for so long? Usually when there is baking soda or baking powder inside and you mix it with wet ingredients, it starts to react and bubble up a bit, and if stays for too long it won’t rise as much when you bake it, because part of reaction is already done and there is not enough hight of the cake and the texture might be off as well.
I never made fondant cake, is it supposed to be under baked anyway and it doesn’t really matter how long mixed batter stays without the oven?
