Gâteau de ménage is a typical cake from France-Comté. It’s made of a sweet pastry, and in the top a nice orange blossom water flavored cream.

Serves 6-8 people:
For the pastry:
- 2 eggs
- 25cl milk
- 2 teaspoons salt
- 50g sugar
- 1 sachet of dried yeast or baking powder
- 1 tablespoon cinnamon
- 500g flower
- 50g butter
- 1 vanilla pod
For the cream
- 2 eggs
- 20cl crème fraîche (You can use sour cream)
- 2 tablespoons of sugar
- 1 tablespoon orange blossom water
Prepare the cake
Heat the milk with the melted vanilla pod. Leave it to heat gently so that the milk takes on the vanilla perfume. Put the flower, baking powder, sugar and salt in a bowl. Add the eggs and the melted butter. Finally add the vanilla flavoured milk.
Mix the contents until you have a slightly sticky ball of dough. Cover with a wet cloth and leave in a warm place for two hours.
Flatten the pastry mix and lay it in a floured mould, making sure the edge is raised and sealed. Leave to rest again for another hour.
Re-flatten the raised pastry. Pre-heat your oven to 180°C.
And the cream
Prepare the cream in a bowl. Mix all the ingredients together. Pour the mixture into the pastry, ensuring it does no spill over the edges.
Cook for 25 minutes.
