Lemon and honey madeleines (Madeleines au citron et miel)

- 2/3 stick of butter, plus extra for the pan
- 2 eggs
- 90g sugar
- 100 g all-purpose flour
- 3g baking soda
- 1 tbsp honey
- Zest of 1/2 lemon

1. Prepare the Pan and Preheat the Oven
Butter your madeleine mold thoroughly to ensure the cakes don’t stick. Preheat the oven to 350°F.
2. Melt the Butter
In a small saucepan, melt the butter over low heat until just liquid. Remove from the heat and set it aside to cool slightly.
3. Combine Dry Ingredients
In a large bowl, whisk together the flour, baking soda, and sugar until evenly mixed.
4. Mix the Wet Ingredients
Add the eggs and honey to the dry ingredients. Mix well until smooth, then fold in the lemon zest. Gradually stir in the melted butter until fully incorporated.
5. Fill the Molds
Spoon the batter into the prepared molds, filling them about three-quarters full. For a more pronounced madeleine hump, allow the filled pan to rest in the refrigerator for 10–15 minutes before baking.
6. Bake to Perfection
Bake for 10 to 12 minutes, or until the edges are golden brown and the centers spring back when gently pressed.
7. Cool and Enjoy
Transfer the pan to a wire rack to cool slightly before removing the madeleines. Serve warm or at room temperature.
