This chocolate lava cake recipe is the one I created for my family, and it's become our go-to for birthday cakes. Not a fancy layer cake with fondant roses, not a box mix dressed up, just a small ramekin with a molten center, made the same easy way every time because nobody wants it any other way.
Good quality chocolate matters here. It's really the main ingredient, and there's nowhere for a mediocre bar to hide. I use Callebaut's 54.5% dark chocolate. It's balanced. A real dark chocolate flavor without tipping into bitter, which also makes it kid-friendly. And the fleur de sel at the end gives it a crunchy, salty finish that makes it hard to stop at one. Some people call this a molten lava cake recipe, but in our house it's always just "the birthday cake."
Good chocolate and a pinch of the right salt will do more for a recipe than any amount of technique.
Why Fleur de Sel Belongs on a Chocolate Cake
Fleur de sel isn't there to make the cake salty. It's there for contrast: a few crystals that don't dissolve, so you get a little crunch and a little brightness right when you bite into the warm, molten center. It cuts through the richness of the chocolate instead of getting lost in it.
I use fleur de sel de Guérande, hand-harvested off the coast of Brittany. It's a finishing salt, not a cooking salt: you sprinkle it on at the very end, never in the batter. That's really the only rule.

Ingredients
- 35g sugar
- 15g flour
- 1 egg
- 1/3 stick of butter
- 60g Callebaut 54.5% dark chocolate
- Fleur de sel, a big pinch, for finishing
Directions
- Preheat oven to 400°F. Spray the 2 ramekins with oil.
- In a saucepan, place the butter in pieces and the chocolate.
- Turn on the heat to medium to melt the chocolate completely, then turn off the heat.
- Add flour and sugar, then mix until combined using the whisk.
- Add the egg, then mix with the whisk until you get a smooth batter.
- Pour the batter into the ramekins, filling them halfway.
- Bake at 400°F for 10 minutes.
- Let cool for a minute, then unmold. Finish each cake with a pinch of fleur de sel before serving.

How do you make chocolate lava cake in ramekins?
Spray the ramekins with oil, no liner needed. Fill them about halfway with batter so the center stays molten instead of baking through, then bake at 400°F for 10 minutes. Let them cool for a couple of minutes before unmolding.
Can I use sea salt instead of fleur de sel?
You can, but it won't be the same. Regular sea salt dissolves faster and tastes sharper. Fleur de sel is milder and holds its crunch, which is the whole point of sprinkling it on at the end.
