Here is a cocktail that works perfectly well, the trio avocado / grapefruit / shrimp. Add to this a few leaves of arugula and a super homemade vinaigrette and here is a fresh salad and gourmet.
Ideal to refresh a heavy meal or to follow you during a picnic. And it falls well, the picnic season will soon be launched. 😉
Ingredients for your summer salad
- For the salad:
- 1 grapefruit
- 1 lawyer
- 150g of peeled shrimp
- 100g of rocket
- A few sprigs of dill
- For the vinaigrette:
- 3 tablespoons olive oil
- 1 tablespoon of balsamic vinegar
- Lemon juice
Preparation of the vinaigrette sauce:
Mix the olive oil, balsamic vinegar and lemon juice. Add salt and pepper then reserve.
Preparation of the summer salad:
Remove the skin from the grapefruit and cut into large pieces. Remove the skin from the avocado and cut it into strips. Peel shrimp and rinse with clean water. Wash the dill and cut some leaves.
Add the vinaigrette and mix.
Presentation of grapefruit / avocado / shrimp salad
Place in 2 large verrines: a bed of rocket, pieces of grapefruit, avocado slices, some shrimp and finally
Season with the vinaigrette. Place 2 unshelled shrimp on top for decoration.
